Not sure if these are actually healthier, but they are magic, and they are mine. I haven't seen anyone else on the internet doing these bars with this particular blend of ingredients. That makes them special - along with the flavor.
And hey, you can FEEL like you're doing something better, with the non-dairy sweetened condensed coconut milk, pumpkin seeds, dried raspberries, unsweetened toasted flaked coconut, whole almonds and the nut "crumble" which was a leftover Paleo "granola" made with various nuts and seeds.
I did throw in a few butterscotch chips, because butterscotch is awesome. But it kind of blows the whole "healthy" thing out of the water. How about this.... just ENJOY! Its easy, fun, and you should do it with your kids because they can't mess it up!
"Healthier" Black Radish Magic Bars

Crust:
2 cups graham crackers, crushed
pinch of salt
1/2 cup Earth Balance (or unsalted butter)
1 tbsp natural sugar
Topping:
1 can sweetened condensed coconut milk (or dairy sweetened condensed milk)
2 cups paleo granola blend (or regular granola)
1/2 cup whole almonds (or any nuts you like)
1/2 cup pumpkin seeds
1/2 cup semisweet chocolate, chopped into chunks (or chocolate chips)
1/2 cup butterscotch chips
1/2 cup unsweetened large coconut flakes
1/2 cup freeze dried raspberries, strawberries or blueberries
Preheat oven to 350. Spray a 9x13 inch glass baking dish with cooking spray. Combine crust ingredients in a bowl or food processor and mix until crumbs stick together and look like damp sand. Press into the bottom of the 9x13 pan evenly and bake for 10 minutes.
While crust is baking, combine everything but the condensed milk in a bowl and mix evenly. When timer goes off, remove crust from the oven and drizzle half of the condensed coconut milk evenly over the graham crust. Then sprinkle over the nut/granola/fruit/coconut mixture evenly, and drizzle the remaining coconut milk evenly over the topping mixture.
Bake on 350 for 18-22 minutes or until lightly golden brown. Allow to cool completely before using a sharp knife to cut into squares and serve. Freezable and will keep for several days at room temperature or longer in the fridge.
